
Remember my post about the obedient loaf of Amish bread who turned into the frozen wave in the Bering sea and could care less about how it behaved? That loaf had to be eaten, eventually. Turns out, the prodigal loaf has returned! It's much different than the other loaf but when its cut thick and toasted with some "butter" on it, its very good!!! **I don't actually use butter but a vegan spread that's very similar and a good substitute....The bread had a lot of air pockets in it, sort of the like Swiss cheese. It gave it a much different texture and hearty-ness. I think it would be a good bread to dip in a soup. I think though, the next time I make it--which will hopefully be soon--I'll make sure to fold the dough after its final rising and then bake it. Disasters in the kitchen can yield good or bad, its a matter of whether you learn from them or not. When you least expect something, at least expect something!
