just let it rest....


So no ginormous pancakes as of yet....maybe soon. I have meat in the fridge that is miserable to un-thaw so I need to cook it before it decides to change pigments and not use deodorant anymore.

Last night as we were all relishing in our dinner, Dave looked up at me and said "you're gonna blog about this, aren't you?" The thought had come to mind but nothing specific. I will say this is, it was soooo very good. So good, my youngest wanted seconds on everything which is very rare for her, if it involves "comfort" foods. ok, ok...I'll tell you what it was and why it was so very very very very yummy....(does that make me a conceited cook, saying my food is yummy??) Well, we liked it, isn't that what matters??? ok, back to last night. I roasted some potatoes with onions along with a pork tenderloin. So whats the difference between this one and the last one I made?? I roasted the potatoes with chopped onions separately and I added sliced onions and a good amount of fresh basil to the pork. I took a clump of the fresh basil and set it on top of the pork right before putting the lid on and throwing it in the oven. Plus, I checked the pork before I "thought" it was done. Its temp read 154 degrees, which was perfect....I put the lid back on and let it rest for about 10 min, on top of the stove--off heat--not only could you taste the basil but the meat was nice and tender. I took some lettuce and tossed it with some Italian dressing and there it was, our dinner. It was nice to see everyone enjoy their meal and ask for more....
